Ingredients

    2 1/2 cups Chelsea Soft Brown Sugar
    50g butter (softened)
    2 cups dates
    2 cups hot water
    2 tsp baking soda
    4 cups High grade flour
    2 tsp baking powder
    2 desertspoons Chelsea Golden Syrup
    2 eggs

Method

    Pre-heat oven to 170 degrees Celsius. Line 2 x loaf tins with baking paper.
    Beat Chelsea Soft Brown Sugar and softened butter, add eggs and beat until mixed.
    Kitchen wizz the dates, water, baking soda and Chelsea Golden Syrup, mix with the butter mixture.
    Measure the dry ingredients (flour, baking powder) and combine with remaining ingredients.
    Spoon mixture evenly into two prepared loaf tins.
    Bake 40-50mins until cooked (until a clean skewer inserted pulls out clean).
    When cooked, turn out onto a cooling rack.
    Once cool, slice and enjoy spread with butter.
