Ingredients

    Shortcake Base
    125g butter
    2 Tbsp Chelsea White Sugar
    1 cup flour
    1/2 tsp baking powder

    Topping
    1 cup Chelsea Soft Brown Sugar
    1/2 cup coconut
    1/2 cup chopped walnuts
    1 Tbsp Chelsea Golden Syrup
    1/2 tsp baking powder
    1 egg
    1/2 Tbsp flour
    Vanilla essence

Method

    Shortcake Base
    Cream butter and sugar,add flour and baking powder. Press into flat tin and bake for 15 minutes in a 400°F oven.

    Remove from oven, mix topping ingredients together and spread onto base. Return to oven and cook for a further 30-45 minutes at 350°F.

    Ice with chocolate icing when cold, sprinkle with chopped walnuts or coconut.
