4 1/2 tsp Gelatine
3/4 cup cold water
3/4 cup Chelsea Caster Sugar
2 tsp Vanilla Extract Food colouring (pink or green)
Toasted desiccated coconut for coating
Step 1: Grease a 30 x 20cm lamington tin and line with baking paper.
Step 2: Whisk gelatine with ½ cup cold water in a heatproof jug. Stand for 5 minutes. Microwave on high/100% for 30 seconds or until gelatine dissolves. Set aside to cool.
Step 3: Put Chelsea Caster Sugar and ¼ cup cold water in the small bowl of an electric mixer. Beat for 5 minutes or until mixture turns white. Add cooled gelatine mixture and vanilla extract. Beat for 8 minutes or until white and very thick. Add pink (or green) food colouring, 1 drop at a time, beating well after each addition until desired colour. Spoon marshmallow into prepared tin and spread evenly. Set aside for 2 hours or until set. Remove marshmallow from tin and cut into star shapes using a 6cm star biscuit cutter. Put 1½ cups toasted desiccated coconut in a shallow bowl. Coat stars with coconut. Serve or package and give as gifts.

I made the recipe twice and both times it turned out a gloopy mess. I wouldn't recommend this one because I've tried better recipes although it does taste nice.
