Easy Spinach and Feta Muffins

2 Cups self raising flour
½ tsp salt
100g feta cheese, cut into small squares
1 Cup spinach leaves, finely chopped
½ onion, finely chopped
⅔ Cup of grated cheese
1 egg
1 Cup milk
Optional: chilli powder, any herbs you like, pepper to taste. Extra grated cheese or parmesan for sprinkling on top.
Preheat oven to 180°C.
Spray a muffin tray with oil or line with muffin cases.
Sift flour and add all ingredients into a bowl, adding the milk and egg last.
Fold all ingredients together.
Spoon mixture into muffin tray, sprinkle extra cheese on top if desired.
Bake for 15 minutes or until golden brown and a toothpick comes out cleanly.
These were delicious! Glad I had my kmart chopper to finely chop everything. Made 12 for a family lunch, ended up taking 6 lol

this recipe is amazing I give it a 10 out of 10. I baked it for my dad and mum and my dad said pass me the butter and I said no try it first and after his first bit he sad wow this is amazing no I don't need the butter
I used half mixture in large muffin tins. My son and I both said at first bite. Wow!! That 'it had the factor of deliciousness' we were expecting. I believe the additional grated cheese enhanced the mixed flavours of cheese. Recommend with soup or visitors.

I altered slightly by adding 1/2 tspn of ground paprika, some freshly diced red chilli, cayenne, thyme and about an extra 1/2 cup grated cheese. Made 8 large muffins.
Whole family devoured these and asked for me to bake again soon
I made exactly as the recipe said except I added half an onion extra. It turned out perfectly... will definitely be making this a family regular!!!

Love, love, love this recipe. Like to swap out onion and replace with sundried tomatoes. Also 1/2 tea spoon each of sage and thyme yum.
Really good! I just added a bit much salt, so make sure you don't do the same. The feta is already very salty.
This is the best savoury muffin recipe yet. If havent got spinach or silverbeet I put in some basil or rocket or anything that's handy and I sometimes change the onion for spring onion and add herbs like parsley, thyme or tarragon or change the greenery for bacon and tomato. It works with anything and is so easy to make. I just put everything in a large bowl and mix it. I use large muffin pans or small bite size ones, it doesnt matter, So quick and easy and a favourite with everyone.
The best I've tried. They go down a treat at term morning teas but I make 6 large. A meal in one with generous lashings of full fat butter. So easy to make, smell amazing, recipe has been shared and shared.

Awesome recipe...easy and yummy! THANK YOU Tips: I did add more grated cheese!! a few mixed herbs and some crushed chilli :) The cooking time was longer as I prefer the golden look!
