Economical Plum Pudding

1 cup fresh breadcrumbs
1 cup Chelsea White Sugar
2 tablespoons butter
1 cup hot water
2 cups mixed fruit
1 cup plain flour
2 teaspoons baking soda
1 teaspoon each of cinnamon & nutmeg
Put breadcrumbs, Chelsea White Sugar and butter into a basin and pour over hot water. Leave this for about 5 mins, and then add mixed fruit.
Sift together plain flour, baking soda, nutmeg and cinnamon. Add this to other ingredients.
Turn into a well greased pudding basin, with firm fitting lid.
Boil for about 2 hours.
I made this on a whim (after all, Christmas just wouldn't be Christmas without Mrs Baddeley's plum pudding) and it turned out really well! I did add a teaspoon of ginger, for preferred personal taste, and had to use a pudding cloth since we don't have a pudding bowl, but it's a really good, simple and easily adjustable to vegan recipe.
I do recommend leaving it overnight, if you use a cloth like I did. It came out a bit pale and soggy looking, but tightened up and darkened after a night cooling in the (off) oven.
