Ingredients

    3 cups plain flour
    2 cups Chelsea White Sugar
    1/2 cup cocoa powder
    2 tsp baking powder
    2 tsp baking soda
    1/2 tsp salt (optional)
    2 cups cold water
    2/3 cup cooking oil
    2 eggs
    2 tsp Vanilla essence
    2 Tbsp white vinegar

    Chocolate Icing
    1 tbsp butter
    1 Tbsp cocoa
    2 Tbsp boiling water
    Chelsea Icing Sugar 

Method

    Sift all the dry ingredients together in a large bowl. Add all liquids together add to the mixture and mix together until smooth. Grease a tin and pour mixture in bake at 180°C for approx 1 3/4 hour.
    Test with a knife to ensure cooked through.

    Icing
    Mix together all ingredients, beating until smooth, adding enough sifted Chelsea Icing Sugar until it forms peak.  Ice cake.
