Ingredients

    5 eggs
    1 onion, chopped finely
    1 cup grated cheese
    1 Tbsp oil
    1/2 cup self raising flour
    1 1/2 cup milk
    1 tsp Chelsea Caster Sugar
    salt and pepper to taste

    Filling
    as desired — potato (pre-cook)
    kumara (pre-cook)
    pumpkin (pre-cook)
    bacon
    garlic
    mushrooms
    silver beet
    broccoli
    tomatoes etc.

Method

    Preheat oven to 150°C. Place the first seven ingredients in a plastic container with a fitted lid and shake for 1 minute.

    Add chopped filling ingredients, mix well and then pour into greased quiche dish. Bake for 30-40 minutes.

Tasted great but as with all other quiche recipies I've tried - it stuck to the pan! I greased the pans well (I used mini mufin trays). Next time will try to grease and flour them.
