Ingredients

    1 Tablespoon Butter
    1/2 Cup Chelsea White Sugar
    1/4 Teaspoon Salt
    1 Egg
    1 Cup Cold Mashed Pumpkin
    2-2 1/4 Cups Self Raising Flour, sifted

Method

    Beat together in a mixmaster the butter, Chelsea White Sugar and salt.
    Add the egg and mashed pumpkin and stir in by hand the sifted flour.
    Roll out and cut into rounds.
    Cook on top shelf in a very hot oven 425/450oF (225/250oC) for about 15 to 20 mins.
