Melted butter, to grease
2 cups self-raising flour
¾ cup firmly packed Chelsea Soft Brown Sugar
1 tsp ground cinnamon
½ tsp mixed spice
160g butter, cut into cubes, chilled
¹/³ cup flaked almonds
1 egg
1 Tbsp whisky (optional)
410g jar fruit mince
1 Tbsp Chelsea Icing Sugar, to dust
Custard or cream, to serve
Step 1: Preheat oven to 180°C. Grease base and sides of a 30 x 20cm lamington tin and line with baking paper. Put flour, sugar, cinnamon and mixed spice in a large bowl. Stir until combined. Using your fingers, rub butter into flour mixture until mixture resembles fine breadcrumbs. Remove 1¼ cups of crumble mixture and set aside for topping. Add almonds and stir until combined.
Step 2: Whisk egg and whisky together, then add to remaining crumble mixture in bowl. Stir until well combined and a dough forms. Press dough into base of prepared tin. Spread fruit mince over dough, then sprinkle reserved crumble mixture over fruit mince. Bake for 30-35 minutes or until cake feels firm to the touch and is golden. Transfer slice in tin to a wire rack to cool. When cool enough to handle, remove slice from tin and cool on rack. When cold, cut into squares, then dust with icing sugar and serve with custard or cream.
