2 Teaspoons Chelsea Demerara Sugar
1/2 Medium Granny Smith Apple, cored and quartered
1/3 Cup Pecan Nuts
1/3 Cup Sultanas
1/3 Cup Raisins
1 Tablespoon Brandy
1/3 Cup Glace Cherries
2 Sheets Ready Rolled Puff Pastry
1 Egg White, lightly beaten
3 Tablespoons Chelsea Demerara Sugar, Extra
1 : Preheat oven to 220oC.
2 : In a food processor, pulse Chelsea Demerara Sugar, apple, pecan nuts, sultanas, raisins and brandy until finely chopped. Add the cherries to the mixture and pulse again quickly, leaving larger pieces of cherry visible.
3 : Place this mixture in a microwave safe bowl, cover and microwave on high (100% power) for 2 mins.
4 : Using a pastry cutter in the shape of a star, cut the pastry into 24 star shapes.
5 : Place shapes on a greased baking sheet, lightly brush with egg white and sprinkle over the extra Chelsea Demerara Sugar. Place in a hot oven (220oC) for 6 mins until shapes are golden brown and puffed.
6 : When cooked, place a spoon of the mixture between the shapes.
