1kg dark plums(stoned)
1.5kg Chelsea White Sugar
1kg Chelsea Soft Brown Sugar
1 tin Chelsea Treacle
7 1/2g cayenne pepper
15g ground ginger
4 1/4L/7pints malt vinegar
125g garlic(crushed)
30g white pepper
30g ground cloves
2 tblsp salt
Boil all ingreadients together until plums are soft. Put through sauce seive.boil again for 1 1/2 hours. Bottle. Makes about 5L.
