Coconut Pie

1/2 c Chelsea White Sugar
1/2 c flour
1/2 c coconut
4 eggs
1/2 teaspoon coconut essence
1 teaspoon vanilla essence
2 cups milk (trim or whole)
Mix all ingredients (except milk) until smooth, try not to get frothy.
Lastly add milk, mix in well, again avoid froth.
Lightly butter a 9 inch round pie dish and bake at 180 deg c for 45 minutes,
Serve hot or cold.
This recipe worked better than any other I have tried. Couldn't get any Coconut essence so I just left it out - made no difference to the taste at all. I find if I just stir the ingredients until they are well blended works. I have in the past frothed them up and disaster - it forms pyramids so not frothing is excellent advice.
