Ingredients

    1 1/2 cups flour
    1 1/2 cups desiccated coconut
    1 cup Chelsea White Sugar
    1 1/2 cups milk
    1 1/2 tsp vanilla essence
    1 1/2 tsp baking powder

Method

    Preheat oven to 160°C. 
    Mix all ingredients together.
    Put into a greased loaf tin and bake for 1 hour.

Beautiful recipe. Both kids love this. I also find just putting 3/4 of sugar is sweet enough. Have read the reviews and next time I'll try baking with just water as it's sweet enough with the coconut

I baked this in 2 silicone loaf pans. I found with the similar recipe, mum's coconut loaf, that if you put it in 1 pan it ends up half-baked. This is the better of the two recipes as it has a bit more coconut flavour. It could do with less sweetness but overall it's a decent loaf.

Awesome simple recipe and such cheap ingredients with no egg, butter or oil needed! Very pleased with the result. Maybe could do with a tiny bit of coconut essence for a slightly more coconutty flavour.

I followed the recipe exactly the same, but It didn’t turn out nicely, it was baked for 1.5 hours, but it’s still so soggy and tastes like dough.

Something with this recipe isn’t quite right, I think it might be the lack of egg. I baked for an hour and a half and still the loaf was under baked and doughy. Overall the flavour is nice but I wouldn’t recommend this recipe.

We love this one too! I sub the milk for water and it works perfectly well too. A great economical lunch box treat!

Nice and easy nd so so tasty

Fantastic and easy coconut loaf recipe, turned out beautifully. I mixed some sugar, water and coconut and spread it on the loaf 10 minutes before it was due out of the oven, that made a crunchy topping.

this is so yummy and soo easy! you can have it the oven in less than 5 mins. Also I split the mixture into two and put it in two loaf tins so it took half as long to cook! perfect

Brilliant easy as and is really lovely if you add 1/2 cup of chopped apricots- which i always do

No idea what I did differently to everyone else. I followed it 100% and still it burned and was liquid in the middle. Disappointed. I wanted a piece of everyone elses joy. :(

This is such a quick and basic treat to bake. Great for school lunches as I put into muffin tins and the kids love them! Delish!
