Junior Apple Pancakes

1 Cup Self-Raising Flour
1 Egg, lightly beaten
1 Cup Milk
1 tbs butter, melted, plus extra for cooking
1 large apple, peeled & grated
2 tbs Chelsea Caster Sugar
1 : Sift flour into a large bowl. Make a well in the centre, add combined egg and milk a little at a time, whisking constantly to prevent batter from becoming lumpy. Stir in melted butter.
2 : Squeeze grated apple between your hands to remove excess moisture. Add to pancake batter and gently fold to combine.
3 : Heat a large non-stick frying pan over medium-high heat. Add 1 tsp butter, heat 30 seconds. Spoon tablespoons of pancake mixture into the pan. Cook 2-3 minutes on each side or until cooked through.
4 : Sprinkle each pancake with teaspoon of Chelsea Caster Sugar and serve immediately.
These were pretty good and easy to make. I forgot to squeeze out the apples. So added some rolled oats to help.
Kids demolished them.
