Lemon and Thyme Slow Roasted Chicken

2-2.5 kg chicken, cut into pieces
10 cloves garlic, kept whole
3 lemons, cut into wedges
1 handful of fresh thyme, about 1/2 cup
4 tablespoons extra virgin olive oil, or lemon flavoured olive oil
200 ml white wine
2 tablespoons Chelsea Soft Brown Sugar
sea salt and freshly ground black pepper
Preheat oven to 160°C.
Place all ingredients in a covered roasting dish. Stir so that the chicken is well coated with oil. Bake for 2 hours. Turn oven to 200°C, remove the lid of the dish and cook for another 40 to 45 minutes to caramelise the lemons and brown the chicken so that it is nice and crispy. Sprinkle with some extra, fresh thyme leaves and serve with a green salad or roast vegetables.
