Ingredients

    1 cup Butter – Softened 
    5 cups of Chelsea Icing Sugar
    1 tablespoon of Lemon Zest
    1/4 cup of freshly squeezed Lemon Juice

Method

    With a mixer, cream the butter together with the lemon juice and zest, and half the Chelsea Icing Sugar.
    Mix until completely smooth, then add the remaining Chelsea Icing Sugar to your desired consistency.

Great taste, but the icing sugar needed a bit of warm milk to make texture less gritty and the frosting more silky. I put a few tablespoons in after the first lot of icing sugar combines with the lemon :)

I haven’t made this yet but I just made your vanilla cupcakes and now I’m finding a buttercream to go with it how many cupcakes will this cover? Will it cover 12? It looks delicious

I think it was alright. It wasn't specific about the butter, if I should melt it or not. I ended up ruining it heaps.
