Ingredients

    Cake:
    50g plain flour
    1 tsp baking powder
    250g ground almonds
    250g unsalted butter, room temperature
    225g Chelsea Caster Sugar
    1 Tbsp zest of orange
    4 eggs

    Decoration:
    80ml juice of orange
    60g Chelsea Soft Brown Sugar
    1 Tbsp marmalade
    Sliced almonds, toasted

Method

    Preheat oven 180°C. Grease and line a 20cm cake tin.
    Sift flour, baking powder and almonds into a bowl, pressing any stray almonds through the mesh.
    Cream butter and sugar until pale, add zest and then add eggs one at a time, beating after each addition.
    Fold in dry ingredients and pour into tin. Bake for 45 minutes until cooked.

    Decoration: Boil orange juice and brown sugar until sugar is dissolved then leave to cool. Pour over warm cake and leave to cool.
    In a heat proof container gently warm the marmalade in the microwave, brush over cake before sprinkling with sliced almonds.

    Tip: Serve with orange segments macerated with whiskey and Chelsea Demerara Sugar if desired.
