Mango Marshmallow Cones

1 small mango
2 tsp gelatine
¾ cup Chelsea LoGiCane Low GI Cane Sugar
20 small wafer cones
2 tbsp toasted shredded coconut
1. Cut cheeks from mango. Peel skin and roughly chop flesh. Remove flesh from around stone and roughly chop. Put in a food processor and process until a puree forms (you’ll need about ¼ cup).
2. Put ¼ cup water in a microwave jug. Sprinkle with gelatine and stand for 5 mins to soften. Microwave on high/100% for 30 seconds or until gelatine is dissolved. Set aside to cool for 5 mins.
3. Put Chelsea LoGiCane Low GI Cane Sugar, mango and 1 tablespoon water in the small bowl of an electric mixer and beat for 5 mins or until pale. Add gelatine mixture and beat for 10 mins or until a thick lemon-coloured marshmallow forms. Spoon marshmallow into a piping bag and pipe into cones. Sprinkle each with coconut. Stand cones in a small glass for 15 mins or until set. Serve.
