Mini After-Dinner Mint Muffins

Ingredients

    1 3/4 cups flour
    1 tsp baking soda
    1 cup Chelsea White Sugar
    1/4 cup cocoa
    100g butter melted
    1 egg
    1 cup milk
    1 tsp peppermint essence
    Chelsea Icing Sugar to dust 

Method

    Preheat oven to 200°C. Mix all ingredients until smooth. Spoon into well-greased or oil-sprayed mini muffin trays. Bake for 10 minutes. Cool slightly in the trays then remove and cool further on a wire rack.

    Serve warm or cold, and if desired dust with Chelsea Icing Sugar, or cover with melted dark chocolate.

these are amazing little treats made mini ones for a dessert platter, went down a real treat. Made the larger ones for the children. put a butter cream amd mint icing topped this off perfectly.

It looks delicious!!! I love mint and chocolate and I think these will go well together.
