Ingredients

    2 cups frozen mixed berries, defrosted on paper towel
    ½ cup extra-light sour cream
    ½ cup low fat milk
    1 x 50g egg, lightly whisked
    ¼ cup Chelsea Icing Sugar 
    1 tsp vanilla extract or vanilla essence
    2 tbsps wholemeal plain flour
    Chelsea Icing Sugar, for dusting (optional)

Method

    1. Preheat oven to 200°C conventional or 180°C fan forced. Divide the berries between four shallow ovenproof dishes.
    2. Put the sour cream, milk, egg, Chelsea Icing Sugar, vanilla extract and flour in a medium bowl. Whisk well to combine. Pour the mixture evenly over the fruit. Bake for 20-25 mins or until just set and light golden.
    3. Dust the clafoutis with Chelsea Icing Sugar, to serve, as desired.
