Ingredients

    2 Cups flour
    2 tsp baking powder
    1 tsp mixed spice
    2 tsp cinnamon
    1 Cup Chelsea White Sugar
    ¾ Cup Chelsea Soft Brown Sugar
    2 Eggs
    ⅓ Cup vegetable oil
    ⅓ Cup milk
    1 Tin of diced apple

Method

    Preheat oven to 180°C
    Line your baking tin (I used a 23cm round tin)
    In a large bowl, mix the dry ingredients together.
    In a separate medium bowl, mix the wet ingredients together.
    Slowly add the wet mixture to the dry and mix well. Transfer to your baking tin.
    Bake for 10 mins then reduce heat to 170°C and check every 20 mins depending on the heat of your oven. Once the skewer comes out clean your cake is done! (In my new oven it takes about 55 mins).
