Ingredients

    1½ Cups flour
    1 Cup coconut
    1 Cup Chelsea White Sugar
    1 Cup milk
    1 tsp vanilla essence
    2 tsp baking powder

Method

    Preheat oven to 160°C.
    In a bowl, combine all ingredients.
    Pour into a greased Loaf tin/pan.
    Bake in oven for about 1 hour or until a skewer inserted comes out clean.

Mouth-watering and flavoursome due to frozen shredded coconut I used. Very easy to make with not many ingredients.

Easy to make but doesn't have much flavour.

Easy loaf to prepare. Added zest of one lemon to loaf batter. Lovely.

Well, it was easy to make and lasted about as long!
