(Halve the ingredients if you don’t want a monster batch)
2 x 500g blocks butter (Softened)
4 Cups Chelsea Caster Sugar
4 Cups Chelsea Soft Brown Sugar
8 Eggs (Room temp. for best results)
4 teaspoons vanilla essence
12 Cups Self Raising Flour
Your choice of Chocolate buttons/Dried Apricots/Peanuts/Coconut etc…
Preheat oven to 180 degrees C.
Mix together butter, sugars & eggs (add eggs one at a time) until well blended.
Add Vanilla essence. Gradually add in flour and mix well.
Add main ingredient for whatever type of cookies you want to make. A handful of everything is great! You will need to mix with clean hands at this stage as it is a huge mixture.
Roll into desired size cookies and place them on a lightly greased or baking paper lined tray giving space to allow for plenty of spreading.
Bake at 180 degrees for 15 -20 minutes.
Allow to cool on a wire rack.
Store in airtight containers hidden from the kids and adults for as long as you can and only bring them out for the lunches or morning teas!
