Ingredients

    ¾ Cup Flour
    ½ Cup Cocoa Powder
    1 Cup Chelsea White Sugar
    1 tsp Salt
    2 tsp Baking Powder
    1 tsp Instant Coffee
    75g Butter
    2 Eggs
    ½ Cup Milk
    1 tsp Vanilla Essence
    1 Cup Berries (Optional)

    To serve:
    Ice or dust with a combination of Chelsea Icing Sugar and Cocoa powder

Method

    Grease and dust with flour (or line with baking paper) a cake tin, set the oven to 180°C

    Beat all the ingredients (except the berries) together until smooth. Fold in the berries (if using). Pour batter into the prepared cake tin.

    Bake for 30 – 40 minutes until a skewer comes out clean. NB: The cake takes longer to cook if adding the berries.

    When cool, ice or dust with a mixture of cocoa powder and Chelsea icing Sugar.
