Onion Marmalade

6 medium onions
1/4 cup Chelsea Organic Raw Sugar
1 1/2 cups beef stock
1/4 cup balsamic or red wine vinegar
4 Tbsp grainy whole seed mustard
250g sour cream (or low fat sour cream)
3 Tbsp chopped parsley
Finely chop onions. Place in a large fry pan with the Chelsea organic raw Sugar and beef stock. Simmer on moderate heat for 45 - 50 minutes, until the liquid has evaporated and the onions are caramelised and golden brown. Stir in the vinegar and mustard.
Onion marmalade can be used as a topping for crostini or served on toast fingers with paté. It keeps well in the fridge. This can be made into a special BBQ Sauce. Gently warm onion marmalade and add sour cream and chopped parsley. Serve just warm or at room temperature as a great sauce for BBQ chicken and meats or it can be served cold as a dip.
