5 passionfruit, pulp removed
2 limes, juiced
¼ cup Chelsea Icing Sugar, sifted
Ice cubes
¼ cup small fresh mint leaves
2/3 cup frozen raspberries
2 cups chilled mineral or soda water
1. Put the passionfruit, lime juice and Chelsea Icing Sugar in a bowl. Whisk until well combined.
2. Fill a jug about one-third full with ice-cubes. Pour in the passionfruit mixture. Add the mint leaves, raspberries and mineral water. Stir to combine.
3. Serve!
