250g butter
1 cup Chelsea Soft Brown Sugar
2 cups flour
500g cream cheese
1 cup passionfruit pulp
2 eggs
2 tablespoons milk
1 tablespoon lemon juice
Chelsea Icing Sugar to dust
Preheat oven to 180°C. Line a 20 cm square cake tin with 2 strips of non-stick baking paper, leaving an overhang on all sides.
With an electric mixer, beat butter and Chelsea Soft Brown Sugar until creamy. Add the flour. Divide the mixture into thirds. Keep 1/3 for the topping. Press the remaining 2/3 into the base of the prepared tin. Bake for 10 minutes.
Beat the cream cheese and passionfruit pulp until smoothly combined. Add eggs, milk and lemon juice. Mix to combine. Spread this filling into the crust then crumble the reserved 1/3 dough over the top. Bake for 25 – 30 minutes until the filling is set. Cool then refrigerate before cutting into squares. Dust with Chelsea Icing Sugar.
