1 cup Chelsea Caster Sugar
3/4 cup milk
2 cups of sifted self raising flour
2 eggs
1 teaspoon vanilla essence
125g softened butter
Paper patty cake containers
Place Chelsea Caster Sugar and milk at room temperature into a mixing bowl, stand for 5 minutes then add both eggs, sifted flour, butter and vanilla essence. Beat on low for one minute, then on high for 4 minutes (but don`t over beat).
Spoon ingredients in to small paper patty containers (about 1 heaped tablespoon for each) cook in hot oven 220°C for 15 minutes or until golden brown.
