1 Tablespoon Chelsea Raw Sugar
100g Light Cream Cheese
1 Teaspoon Grated Orange Zest
1 Teaspoon Brandy
1/4 Teaspoon Nutmeg
1 Sheet Ready Rolled Frozen Puff Pastry
425g Canned Sliced Peaches in Natural Juice, drained
Egg White
1 Tablespoon Chelsea Raw Sugar, extra
1 : Preheat oven to 230oC.
2 : Mix together Chelsea Raw Sugar, light cream cheese, zest, brandy and nutmeg.
3 : Thaw pastry and cut sheet into 4 squares. Place a quarter of the cream cheese mixture in the centre of each square, and top with peach slices. Brush edges with water and bring the corners together in the centre, pinch along the edges to seal while leaving a hole in the centre to show the peach slices.
4 : Brush with egg white and sprinkle with extra Chelsea Raw Sugar and bake in a very hot oven (230oC) for 8 mins or until golden brown.
