Ingredients

    125g butter
    1/2 cup Chelsea White Sugar (113g)
    1 Tbsp Chelsea Golden Syrup
    1 egg
    2 cups plain flour (300g)
    2 tsp cocoa powder
    1 tsp baking powder
    1 tsp ground cinnamon
    1 tsp mixed spice

    Icing
    2 cups Chelsea Icing Sugar (300g)
    3-4 Tbsp hot water
    1/4 - 1/2 tsp strawberry or raspberry essence
    2-3 drops pink food colouring
    Sprinkles

Method

    Preheat oven to 180°C conventional. Grease or line two baking trays with baking paper

    Beat butter and sugar until pale and fluffy. Mix in the golden syrup followed by the egg. Sift dry ingredients and combine with the butter mix to form a dough.

    Roll out dough on a floured surface to roughly 3mm thick. Using a biscuit cutter or small plastic tumbler press out biscuit shapes and place on baking trays. Press remaining dough together and roll out again, pressing out shapes until mixture is used up.

    Bake for 15 minutes. Cool on a wire rack.

    Icing 
    Mix icing sugar and enough hot water to make a spreadable icing (add water a little at a time). Mix in strawberry or raspberry essence and food colouring, to achieve you desired berry flavour and pink colour.

    Spread icing thinly over each biscuit and top with sprinkles - try 100’s & 1000’s or candy shapes (available from supermarkets).

Tips

    Make Belgium biscuits by spreading raspberry jam on biscuits and sandwiching two together (halve the icing and ice only one side).

Very tasty! I Was trying to make "Iced Animals" So did didn't add all the cocoa or the spices, (only 1/4 tsp cinnamon), I added a couple of tsp of milk to it, and rolled it into balls and pressed it flat with my hands. Yes 15 mins, was a little long, I think 12mins might have done it. I also elected to do a royal icing on top. The result is absolutely delicious, a nice crunchy biscuit, that's not too hard.

Fun and easy to make as a yummy Valentine's Day family treat - heart shaped of course =) I lowered the temperature by 10° and found 10 mins cooking time spot on for the smaller biscuits I made.

They were really dry but if ypu dip them in milk they are delicious!

Lovely flavour and texture but the first batch 'caught'. The second batch, I baked for 10 minutes. Much better!

Awesome easy recipe tastes so good. I made regular icing topped with raspberry jelly crystals kids loved them.
