Ingredients

    1 heaped cup self-raising flour
    1 cup Chelsea White Sugar
    Pinch of salt
    60g butter
    2 eggs
    Approximately 3/4 cup milk

Method

    Preheat the oven to 180°C and grease a 20cm round tin or line with baking paper.

    Sift the flour, sugar and salt into a bowl.

    Melt the butter in a separate bowl in the microwave. Break eggs into a measuring cup and fill with milk to the ‘1 cup’ mark.

    Pour liquid ingredients into the dry ingredients and beat with a wooden spoon until well combined.

    Place mixture into the prepared tin and bake for half an hour or until a skewer inserted into the centre of the cake comes out clean.

Tips

    This is a great base recipe - delicious as is, or perfect for turning into more elaborate birthday cakes and cupcakes. You can add a drop or two of food colouring if you wish.

Easy to make , but delicious cake

The recipe did not include any leavening agents, so my cake came out flat and dense. Was disappointed because I was expecting it to coke out moist and fluffy. I would like to try again with baking powder or baking soda and something acidic.

Very easy delicious cake, I sometimes bake it in a loaf tin.

180C for 30 min. Cake was bit dry. Also most measure cups don't have cups for mil but ml. Bit unclear how much milk required. Loved the simplicity of the cake but was too dry.

It taste very good and pretty easy to make :)

very disappointing

Ummmm....120g flour is nowhere near a cup....I'm guessing a heaped cup of flour is 200g? Can u please confirm this?

My beater had broken so was looking for a quick mix cake. This is lovely, I added some vanilla extract and lemon, next time I think I shall add sultanas,. So versatile, quick and delicious.

Hi, I find your recipes great and have had many successes with them. No patience needed. It's my baby granddaughters birthday today and she ordered butter cake and cheesecake. I know she will want a new dancing costume and some cooking products - she has a warehouse muffin maker and that gets used heaps when she has the ingredients. Thank you for your website.
