Raspberry Surprise Muffins

50g butter melted
3/4 cup milk
2 eggs
1 1/3 cups flour
1/2 cup Chelsea White Sugar
3 tsp baking powder
2 tsp cinnamon
small tub cream cheese, softened. (approx. 150g)
12 raspberries fresh or frozen
Chelsea Icing Sugar for dusting (if desired)
Mix butter, milk and eggs.
Add flour, Chelsea White Sugar, baking powder and cinnamon.
Fill well-greased or oil-sprayed muffin tray 1/3 full with mixture.
Add 1 teaspoon of cream cheese to each muffin.
Place 1 fresh or frozen raspberry on top.
Fill with remaining mixture and bake for 15-18 minutes at 200°C.
Leave in muffin tray for 5 minutes before lifting out onto rack to cool.
Dust with Chelsea Icing Sugar if desired.
this was not a hit in my hose, they said it wasnt right having the cream cheese with the raspberry, no one liked them!!
