Ingredients

    125g butter, softened
    2 cups flour
    3 tsp baking powder
    approx 1 cup milk
    approx 1/2 cup of jam

    Syrup
    3/4 cup Chelsea White Sugar
    3/4 cup boiling water
    75g butter, melted

Method

    Preheat oven to 180°C. Lightly grease a 22cm x 9cm ovenproof dish. Rub the butter into the flour and baking powder until the mixture is fine and crumbly and make a well in the centre. Add enough milk to make a soft dough.
    Turn out onto a lightly floured surface and gently form together.
    Using a floured rolling pin, roll the dough out to about 1cm thickness. Spread jam over the dough leaving a 1cm edge free of jam all the way round. Roll up like a Swiss roll and place in the prepared dish.

    Prepare the syrup by stirring together the Sugar, water and butter and pour over the roll.
    Bake in preheated oven for 45-55 minutes until roll is golden and well risen.

    Sprinkle with Icing Sugar before serving.
