Ingredients

    1 cup flour
    1 cup Chelsea White Sugar
    2 eggs
    100g melted butter
    2 tsp baking powder (heaped)
    3 Tbsp custard powder (heaped)
    ½ cup milk
    1 tsp lemon juice
    Zest of one lemon
    2 tsp ground ginger

Method

    Preheat oven to 180°C. Place all ingredients into a mixing bowl and mix until well combined. Pour into greased and lined 2 x 20cm cake tins. Bake until cakes spring back when touched lightly or a skewer comes out cleanly, approx 20mins. Remove from oven and cool.
    Ice with lemon cream cheese icing.
