Ingredients

    4½ Tbs Chelsea Icing Sugar
    15oz flour (425g)
    15oz butter (425g), softened

Method

    Grease a 2 patty pans well. Preheat oven to 150⁰C.

    Mix all ingredients together. Roll into balls and place a ball in each patty pan. Cook 5 minutes at 150⁰C. Remove from oven, wait a minute or 2 and then flatten with the back of a soup spoon to the shape of the patty pan. Cook about 10-15 minutes more, until golden.
    Leave to cool before filling with your choice of ingredients.

    Great with stewed apple as a pudding.
    Just heat and serve with cream or ice-cream.
