Sugar Coated Peanuts

2 cups peanuts
1 cup Chelsea White Sugar
1/2 Cup of Water
1/2 teaspoon Red Food Colouring
Combine all ingredients in a large frying pan. Stir over a low heat until sugar is dissolved.
Bring to the boil, boil steadily uncovered for ten minutes. Remove from heat. Stir constantly with a fork until sugar crystalises around peanuts.
Pour the mixture onto an ungreased baking tray and separate the peanuts with a fork.
Bake at 150o C for approximately half an hour, stirring every 10 minutes to ensure the mix bakes evenly throughout.
I've made sugar peanuts for many years but I tried this recipe out of interest.
These had the best results ever.
Easily separated peanuts after the coating and into the over I think just dried them out a bit more so that they didn't stick together.
