Ingredients

    2 crumpets
    1 tsp butter
    ½ tsp olive oil
    1 kumara, grated (Optional)
    1 carrot or parsnip, grated (Optional)
    2 rashers of Bacon
    1 egg
    1 tomato, sliced
    Drizzle - Chelsea Golden Syrup
    Butter

Method

    Use two frying pans (to make things easier!)
    In one pan melt a teaspoon of butter & place the two crumpets in to warm.

    Heat the olive oil in the other frying pan and add the grated ingredients (highly recommend using them as they add more flavour!)
    Once semi cooked add the bacon & fry until cooked.
    Remove warmed crumpets and crack an egg in the frying pan to cook.

    Once all the ingredients are cooked plate up as follows: crumpet, grated vegies, bacon, egg & crumpet on top.
    Slice the tomato and add onto the side of the plate... Drizzle with Chelsea Golden or Chelsea Maple Flavoured Syrup & you have a delicious brekkie!
