Ingredients

    1kg strawberries (hulled and rinsed)
    1kg Chelsea Jam Setting Sugar
    1 knob of butter (10g)

Method

    Prepare / sterilise your jars (find our method here).

    Crush strawberries coarsely with a potato masher or blender.

    Place strawberries and Chelsea Jam Setting Sugar in a large, heavy-based 6 litre pot.

    Heat mixture on low until sugar has dissolved. Do not allow to boil.

    Add butter then increase heat and bring to a full boil (a boil that cannot be stirred down).

    Boil for 4 minutes only. Remove from heat and skim off any foam. Test for set (place a spoonful of jam on a saucer, leave for 30 seconds, then push a teaspoon through the jam - if the surface of the jam wrinkles, it is set).

    Bottle in pre-sterilised jars.

we have a diabetic in our family, so we half the sugar content (sorry i know u sell sugar) but it is still a very quick and lovely jam recipe.

Easiest jam recipe I've found.

Its a winner this one! I used 15 gms of butter. I used bright red ripe strawberries and the resulting jam was a lovely red, not a burgundy red. It turned out brilliant. Am very pleased.

Brilliant. Quick and easy and got 4 decent sized jars ;0)
