2 cups Chelsea White Sugar
2/3 cup Chelsea Golden Syrup (tin)
1/2 cup water
Flavouring extract
Food coloring
Wooden craft sticks or lollipop sticks
Line 2 baking trays with foil, keeping foil very smooth.
In medium saucepan, combine Chelsea White Sugar, Chelsea Golden Syrup and water.
Cook, stirring constantly until sugar dissolves. Increase to high heat; bring to boil. Cook without stirring (15-20 minutes) until candy thermometer reaches 150°C (hard crack stage). To test, place a drop of mixture in a glass of water—if brittle ball forms, it's ready. Remove from heat.
As with any hot liquid, take special care in handling. Immediately stir in flavouring and colouring.
Lightly grease heart-shaped cookie cutters and place on foil-covered baking trays. Slowly pour syrup from glass measuring cup with small spout, filling cookie cutters to 1/4-inch thick. Let cool slightly until syrup holds its shape. Remove cookie cutters and press wooden craft sticks or lollipop sticks into each lollipop immediately. Cool at room temperature. If desired, wrap in clear plastic candy bags, tied with ribbon, for a special touch.

1 1/2 tsp. peppermint extract
2 tsp. lemon extract
1/2 tsp. almond extract
1/4 tsp. oil of cinnamon
1 tsp. vanilla extract
