Ingredients

    185g Flour
    3 tsp Baking Powder
    185g Chelsea Caster Sugar
    80g Unsalted Butter
    1/2 cup Buttermilk
    3 Eggs
    1 tsp Vanilla paste

Method

    Preheat oven to 150°C fan bake. Place cupcake cases in muffin tray.
    Sift all dry ingredients including Chelsea Caster Sugar into a large bowl add butter and mix with electric mixer until it resembles fine bread crumbs.
    Add buttermilk, eggs and vanilla paste, mix well.
    Use a ladle to fill the cases 1/3 of the way. Bake for 20 to 25 mins. Cool on wire rack and ice.
