8 Weetbix, crushed
2 cups Chelsea White Sugar
2 cups sultanas (or your choice of fruit)
2 tsp baking soda
115g butter, softened
2 cups boiling water
2 eggs
2 cups self raising flour
Preheat oven to 170⁰C.
Add all the ingredients up to the water into a bowl.
Pour over the boiling water and leave to stand for 5 minutes. Now mix together.
Add 2 beaten eggs and 2 cups of Self raising flour & mix again.
Place mixture into 2 greased loaf tins
Cook for about 55-60mins or until skewer inserted comes out clean.
This recipe is fantastic and I put it into a square cake tin. Substitute butter for olivani or coconut oil and replace eggs with ground up chia seeds and you have a vegan cake or loaf. It is awesome.
This loaf is awesome, my mum used to make it all the time when we were kids. Add feijoa instead of sultanas to use up surplus. It's delicious.
