Ingredients

    1 orange quartered
    1/2 cup extra orange juice
    1 egg
    1/4 cup oil
    1/2 cup raisins
    1 1/2 cups flour
    3/4 cups Chelsea White Sugar
    1 teaspoon baking powder
    1 teaspoon baking soda
    3 tablespoons Chelsea Soft Brown Sugar
    3 tablespoons finely chopped walnuts

Method

    Remove any pips, then process whole orange in food processor until finely chopped.
    Add juice, egg, oil, raisins and pulse briefly. Tip into a large bowl.
    Gently fold orange mixture with the remaining ingredients (except the brown sugar and walnuts) until just combined.
    Spoon into greased or oil-sprayed muffin tray.
    Sprinkle with Chelsea Soft Brown Sugar and walnuts mixed together.
    Bake for 15 minutes at 200°C.
    Cool a few minutes in the tray then tip out and further cool on a wire rack.
