Ingredients

    115g butter or soft margarine
    1/2 cup vegetable oil
    1 ¾ cups Chelsea White Sugar
    2 eggs
    1/2 cup milk
    1 tsp vanilla essence
    2 c self raising flour
    ½ tsp baking soda
    1/2 tsp cinnamon
    1/2 tsp ground cloves
    1/2 tsp salt 
     4 Tbsp cocoa
    2 1/2 cups grated zucchini
    1/4 cup ground walnuts
    ¼ c dark chocolate chips

Method

    Preheat the oven to 165 degrees C.
    Cream butter, oil and sugar.
    Add eggs, milk and vanilla, and beat well.
    In a separate bowl, sift dry ingredients together. Blend the dry ingredients into the butter mixture. Add the grated zucchini and mix well.
    Spread the batter into the prepared cake tin. Sprinkle the top with the walnuts and chocolate chips.
    Bake in the preheated oven for 45 minutes.

    When cold, ice with Chelsea Rich Chocolate Icing.

    Makes two average size cakes.

So moist & easy to make, good way to use up excess zucchini from the garden

I have made this twice now. The first time I made one cake and cupcakes. Both very popular. The second time I made one for us and one for my mother for her birthday. She said it was too good to share. High praise!

Great recipe, would be better to have the note that it makes 2 cakes at the start of the recipe tho.
Tasty and easy, would be lovely with many different variations.
Halve the recipe and you’re away laughing.

Best chocolate /zucchini cake I’ve ever made! I iced with lemon cream cheese icing. So delicious and moist. We all kept having seconds!! Possibly don’t need the chocolate chips but the ground walnuts were fab.

Great recipe, makes two round 20cm cakes. Just remember to wring the grated zucchini inside a teatowel to get the water out. Let it cool in the tin. Doesn’t rise that much. Topped mine with crushed hazelnuts and choc chips under a light choc icing.

This is absolutely the very best chocolate cake EVER. Moist and delicious it keeps and freezes very well. I add a couple of handfuls of sultanas as an extra deliciousness. Our go to chocolate cake and I freeze bags of grated zuchinni so I can make it all year round

Lovely moist cake and a great way to use the overabundance of zucchini from the garden.
I found the recipe is good in 2 x 20cm tins, and the Chelsea rich chocolate icing is perfect on top.

Beautiful moist tasty cake and that’s without the icing - you can’t see the zucchini in it so my kids didn’t even know.

Love it! Great receipe when drowning in zucchinis from my garden. Made it several times and has been great every time. I squeeze the juice out of the grated zucchini first and leave the walnuts out. Off to my kitchen now to whip up another one :-)

This is a fantastic cake. Possibly the best chocolate cake I’ve ever had. Super-moist, very tasty, rich, high, and light texture. Omitted the cloves, and didn’t ice it - it really doesn’t need it. Try it.
