Ingredients

    Base
    125 grams Tararua Butter, softened
    1/2 cup Chelsea White Sugar (113g)
    1/2 tsp vanilla essence
    1 egg
    2 cups Edmonds Standard Grade Flour (300g)
    1 tsp Edmonds Baking Powder

    Filling
    4 tsp gelatine
    1 cup cold water (250ml)
    1 cup Chelsea White Sugar (225g)
    1 egg white
    1 cup Chelsea Icing Sugar (150g)

    Optional
    few drops of raspberry flavoured essence
    few drops of red food colouring
    desiccated coconut, to sprinkle

Method

    Base
    Preheat oven to 180˚C bake.

    Cream Tararua Butter and Chelsea White Sugar together. Add vanilla, then egg and sifted dry ingredients. Mix until well combined.

    Press into a slice tin and bake for 20-30 minutes, until golden and firm.

    Filling
    Soften gelatine in cold water in a medium saucepan. Add Chelsea White Sugar and boil for 8 minutes. Cool.

    In a separate large bowl, beat egg white until stiff. Fold in Chelsea Icing Sugar, then slowly pour in cooled gelatine. Beat until white and thick (about 3-5 minutes).

    Add raspberry essence and food colouring and beat until combined. Spread on shortcake immediately and sprinkle with coconut, if using.

    Leave to set for a few hours before slicing and serving.

I used to make this slice as a child and had forgotten all about it until I was googling new ideas for baked goods for my kids lunchboxes. Making this again brought back memories and my kids loved it! They thought it was amazing that I made the marshmallow from scratch haha. Lovely recipe! 100% recommend :)

Superb recipe, the base and topping is not at all sweet. The marshmallow set in 1.5 hours.

Worth all the effort. Great flavour and simple process. Easily adaptable to different flavours. We did raspberry with chocolate on top and lemon with coconut on top. Delicious

The instructions for the marshmallow are quite unclear. Am I meant to stir the gelatine mix and how cool is the marshmallow meant to cool to confused me quite a lot

I used to make this for my now Adult Children. We used to call it Yuk Cake because it was sooo yummy we would all eat too much of it.

Lovely easy recipe. My daughter chose to make it the colour Aqua as was very tasty.

Unfortunately the marshmallow comes out really grainy, rather than a smooth marshmallow like I would have expected.

I've loved this recipe forever. My Mum used to make it when I was a child. I can never seem to get the marshmallow as thick as it is in the video. Does the gelatin mixture need to be absolutely cold before you add it to the egg white and icing sugar?


CHELSEA SUGAR: Hi there, glad to hear you love this recipe! The gelatine mixture does need to have mostly cooled down, but it doesn't need to be absolutely cold. You may need to beat it for a little longer?

Is it 8minutes from when it first boils?

Very Easy recipe.... A lovely slice for young and old!..

I have made this before some years ago and it was awesome and I'm wondering if those people that put negative comments in the reviews would say their piece to the Chelsea co faces because this is sheer cowardice to speak to people through the keyboard like this, it isn't what you are saying but the way you are saying it.

Great recipe, already had all the ingredients which was a bonus. I doubled the egg white as my egg was small and it made heaps of marshmallow! Whipped for five minutes now setting in the fridge. Highly recommend!

Great recipe found it a lot less sweet then one I usually make which is good will definitely make again thanks for sharing

Great recipe. I followed it to the T & it made a huge fluffy marshmallow topping 2.5cm high. I used a 25x16 slice tin as I found that fitted the base size best but it only just fits the huge topping (which was actually great base vs topping ratio). My base was a bit crumbly-it only needed 20mins. Thanks

I love this recipe, it makes me feel at home. Instead of raspberry flavoring we used vanilla bean extract and it was yum. I recommend putting plum jam between the marshmallow and the base. Yum!

I’m not a very good cook but I can make this with ease. I put a little less icing sugar in the marshmallow topping as I found it too sweet. Recommend

Very tasty and just as I remember having as a little girl. Made the topping with vanilla paste for flavour. Whipped the marshmallow to stiff peak stage, and then poured/spooned into the tin. Set it in the fridge. Kids are very impressed! Will make again. Next time I might try raspberry jelly crystals!

Great base... Whisk dont beat the marshmallow.

The base is good but the marshmallow is a sticky disgusting mess. It makes an unspreadable mess when trying to put it onto the base.
To give it one star is a major compliment!

My grandma and mum used to make this. One of my favourite childhood recipes - I had the handwritten recipe in a cookbook but it was a bit confusing. Going to try and make some soon!

Im happy to see this recipe. Our Mum used to make it many years ago. She would would make pink Marshmallow. I might try it with some Green Matcha Tea in it. Looking forward to trying it.

How do you fold icing sugar into such a small amount of whipped egg white? Marshmallow seems really powdery/ grainy?
