Ingredients

    1 cup peeled, chopped feijoas (275g)
    1 cup boiling water (250ml)
    1 cup Chelsea White Sugar (225g)
    50g Tararua Butter
    1 egg
    2 cups Edmonds Standard Grade Flour (300g)
    2 tsp Edmonds Baking Powder
    1 tsp Edmonds Baking Soda

Method

    Preheat oven to 180°C bake and grease and/or line a loaf tin (approximately 22cm x 12cm).

    Place feijoas, boiling water, Chelsea White Sugar and butter in a large saucepan. Simmer for 5 minutes, then set aside to cool for 5 minutes.

    Mix in egg, flour, baking powder and baking soda.

    Pour into prepared tin. Bake for 35-45 minutes, until loaf springs back when lightly pressed and a skewer inserted into the centre comes out clean.

    Cool in tin for 10 minutes, then transfer to a wire rack to cool completely. Delicious sliced and spread with butter!

Tips

    For an extra flavour kick, add some chopped crystallised ginger to the loaf. Feijoas and ginger are a great combination!

This is such a tasty recipe. I have made it for so many people and shared it with many more.

Love this loaf, so does all the family, so quick and easy and works everytime, I add 2 tablespoons of crystalised ginger which adds a zing to it

Very popular with my family. Made exactly as recipe given except that I let the feijoa mixture get completely cold before continuing. Cooked in 30 minutes. Next time I would reduce sugar a little and perhaps use the whole feijoa as some reviewers have suggested.

I make this loaf all the time when we have feijoas and everyone loves it. I like to add a sprinkle of brown sugar on the top so then it makes it crunchy and a yummy flavour.

Delicious loaf. Big mixture, I got a large loaf and a mini loaf. I added a touch of cinnamon and some chopped walnuts which was very nice. Will be a well used recipe in future.

Used 3/4 cups sugar, and sprinkled with brown sugar before baking (essential for a lil crunch). Didn’t have walnuts but would def add this in next time. 10/10

This was easy and was so yummy. I doubled the recipe and made two loaves. I sprinkled brown sugar on top before baking and put 1/4 cup of ginger (not crystallised) in the recipe.

This recipe is wonderful. The loaf is tender and flavourful not to mention very easy with just 50grms of butter.

Fam loved it! Altered 1 cup of sugar to 1/2 and was still perfect!

Really surprised at how good this turned out. I didn't have any mixed spice so added 1 tsp each of ginger, cinnamon and nutmeg. The only thing was that I added more than a cup of feijoas and it didn't cook as well as I know it probably would have if I'd followed the amount in the recipe. Was delicious toasted!

The whole bottom of my loaf was wet mush. Second time I've tried the recipe and the same result even after an extra 20mins in the oven. Do I need to omit some water? Ugh.

Tried this recipe twice, both times came out too wet in the middle even after the full baking time. One cup sugar is far too sweet. Tried cutting down the amount of water, still too wet. Made me sick both times I ate it as it didn't cook through. I suspect the amount of sugar is aimed more for sales than taste. Even friends who "hate" fresh feijoas like this loaf - I use half the amount of sugar however I sprinkle brown sugar over the top before placing in the oven just to give this a little crunch!!! A friend adds chopped crystallized ginger plus a tspn of ground ginger to the wet mix

I make this recipe every year for feijoa season. So delicious and easy.

Please take this recipe down. It's very misleading ie 2 cups self raising flour or 2 cups standard flour plus 2 teaspoons baking powder. I used 4 cups - a total waste of precious resources.

I made this recipe exactly as written and it turned out perfect - the only thing i did differently was add 100g of walnuts to add texture. Love this recipe and would recommend anyone giving it a go if you love fejoas

So easy to make, my 4 year old grandchildren make it with me and only out of the oven 5 minutes and eating it. I swapped out sugar to brown sugar and added a tsp of cinnamon

Easy and delicious! I added walnuts, mixed spice and vanilla, and sprinkled brown sugar on the top - thank you to the other reviewers for these ideas. I used the suggested amount of sugar in the recipe and thought it was the perfect amount of sweetness. Loaf is lovely and fluffy/moist, 45 minutes cooking time in a benchtop oven.

The rum replaces 1/4 of the water, & 1/4 of the sugar.
Also, putting the eggs in AFTER all flour, baking soda, and baking powder works best. I was finding the eggs poached in the hot water/sugar/butter/fruit mix.
Waking up to the smell of this is divine.
Going to make enough to freeze for Christmas.

Oh my, this didn't turn put very well for me, didn't taste like feijoa was dry and pretty bland.

Surprised how good this was. Used 1/3 cup sugar, and sprinkled loaf with 1 T sugar before baking. Baked it at 7000 feet with no adjustments and it came out great. It was done at 35 minutes.

Love the recipe and have tried various fruit (banana, dates, dried apricots), spices (nutmeg, cinnamon, garam marsala and will try ginger) and nuts (walnut, pistachio, hazelnut) successfully.
I did change some measurements in the recipe and added a few other ingredients that I found successful:
I only use 1 cup of SR flour and 1 cup of wholemeal flour and like others have mentioned, I only use half the sugar. I like to add salt to all my baking. I also add vanilla essence to this recipe as well. Results in a more moist loaf.

I've been given a mountain of fruit, it's completely soft and ripe but very tart (must be something to do with the soil down south) This recipe is absolutely perfect for them. I probably used a bit more fruit as I used a cup of pulp rather than chopped and added a big pinch of mixed spice. I also made another one with 40ml of oil instead of butter and sprinkled brown sugar on top and they are absolutely beautiful! This recipe has so many possibilities and can have so many variations

What size loaf tin is everyone using?, I used what is a std loaf tin and the mixture is way too much for the tin.

Most simple easiest loaf to make. Delicious to eat. I'll try kiwifruit instead of fejoa using this recipe.

It is such a lovely easy loaf to make. I have feijoas in the freezer and use these out of season. Is always a hit.

Simple recipe to follow as is, but also super simple to just wing and make it your way.

Observation and Notes:
Obviously this is the Chelsea site so the sugar is completely overkill. I used 1/3 a cup Chelsea white sugar for a hint of sweetness, but really letting the fruit shine through.

Added smashed up walnut pieces for added texture and balance to the feijoas sweet/sour notes.

Used Edmonds Gluten Free flour.

Whole fruit was used, skins and all. Just top and tail them cut into rough chunks and simmer as directed. Only added step was a 30 second stick blender in the pot to make a pulpy consistency.

Result was a delicious dense fruity slice with a chew resembling bread and texture of pudding with a subtle sweetness.

A very easy recipe to make up. I just used standard flour with 1tspn of Baking Powder and the loaf rose to the top of my loaf tin. It was also a very tasty loaf .

Was thinking the texture would be similar to a normal cake but texture was similar to a gooey brownie which ended up being delicious! Tasty otherwise.

Yes love the recipe and have also added extra fruit. I made it using persimmons as I have plenty, worked well.

No need to peel the feijoas - just wipe/wash and top and tail before chopping small. Less waste, less time and more fibre!

Great recipe. I double it and bake a loaf and muffins at the same time. Also if you boil it a little longer you get a more toffee-like result which is delicious. You can swap Olivani for the butter for a dairy free alternative.

I made this with gluten free flour and it was lovely. Very easy recipe to follow. The gluten free flour does mean that it is a little more dense than usual but that's often the case with gluten free flour.

I have been making this loaf for a few year now. It is so easy and never fails. I add a tsp of mixed spice for a little more flavour.

This loaf is beautiful! A real hit with my teenage son. Great texture & flavour. I did add my egg as the last ingredient to avoid it cooking at all. It did take 15mins less to bake, but was golden brown on top and cooked all the way through. Truly delicious. Will make again!

This is the second time I have baked this loaf, and it gets easier every time. It has a lovely taste and texture and is so yummy. and being the only one in the family that likes feijoa's I get to eat the lot.

Absolutely delicious. I can’t usually stand the flavour and texture of a feijoa but this loaf is so amazing, it has me going back for seconds! Very easy to make too which is what I prefer when baking.

Loved it! A really quick, easy and delicious recipe (minimum no washing up).
I'm not a sweet tooth, so on the one I made 1 day later (it's good!) I reduced the sugar to 1/2 cup of brown sugar, peeled the skin off and used all of the flesh rather than just the soft pulp (even more flavour), and reduced the bicarb to 3/4 tsp. Next time I'll increase the fejioas a little. Maybe tomorrow?

I wonder if caramelizing the sugar would work too. Maybe next week??

Absolutely stunning and easy as feijoa loaf! We have hundreds of the things on our tree and this is definitely my favourite recipe, out of the many I have attempted!

This recipe is amazing! Super easy. One thing to keep in mind is that a feijoa is a moist fruit so the only downside is that while cooking, it didn't 100% fully cook or maybe it did but the juice off the fruit moistened the surrounding area?? Unsure. But overall, the recipe isn't too sweet, and it's so good served while still warm with ice cream! Totally recommend.

Love this recipe. It is failproof and so easy. I have also used bananas instead of feijoas and it made an amazing banana loaf!
I use a metal loaf tin with a lid and it keeps it so moist and soft, especially on the top.

Top Tip: With this recipe, you can cook the feijoas, water, butter and dates - and freeze in a zip lock bag to use another day! Great when feijoas are surplus.

I love this version of the loaf & already I've made 6 loaves since the beginning of this season. 2 of them I gave away as treats to friends.

Pretty tasteless, The feijoas had more flavour than the loaf, I suggest to use more feijoas or even mash them and add them in.

We are absolutely drowning in Feijoas at the moment and this recipe is quick, easy and delicious. The second time I made this I doubled the amount of Feijoas (used 2 cups) and I also sprinkled some brown sugar on top of the mixture before I put it in the oven. Doubly Delish!

I have made this twice and everyone loves it. It's very easy to make.

Must have done something terribly wrong because all the reviews for this are amazing, however this was the worst piece of baking I have ever done. I ended up having to cook for an extra half an hour and it was still just a pile of stoge. I was far too sweet for me to even though I cut the sugar down to 3/4 of a cup if I ever attempted it again which I won't I would only use half a cup.

So good! Just make sure you use exactly a cup and no more fejoias than that as my second attempt I used 1 1/2 cups by accident as I didn't measure and it didn't cook through properly and fell apart. But with the correct amount it came out moist, delicious and lasted over a week and tasted like it had just come out of the oven a week on!

Delicious and for extra taste I added a squeeze of lemon juice as well as the zest of the lemon.

This was gross, followed the instructions but it turned out like a mushy pancake...

I doubled the batch size as we have lots of feijoas to use up and made two loaves. My oven is hot so I baked this at 170 degrees fan bake, and it was done after 40 minutes. As suggested by someone else I added the eggs last so as not to cook them in the hot fruit mixture. Am sharing the recipe, it was easy and the loaf is so good!

Excellent recipe we love it with walnuts in it. My favourite and very easy to make. My suggestion would be to add the flour mix before the eggs to stop eggs cooking with using a warm start to the first ingrediants. We have had many from our feijoa tree, even tried to freeze a couple but they only lasted a couple days.

I add half a cup of sultanas with the feijoa, and swap one cup of the plain flour for wholemeal. Yum
