Ingredients

    BASE
    100g Tararua Butter
1/2 cup Chelsea Soft Brown Sugar (100g)
1/2 cup Edmonds Self Raising Flour (75g)
1/2 cup Edmonds Standard Grade Flour (75g)
    2/3 cup desiccated coconut (67g)

    FILLING
    100g Tararua Butter
1/3 cup Chelsea Soft Brown Sugar (67g)
    2 Tbsp Chelsea Golden Syrup
    400g can sweetened condensed milk

    TOPPING
    180g dark or milk chocolate
    1 Tbsp vegetable oil

Method

Preheat oven to 180°C bake. Grease and line a small slice pan (28cm x 18cm).

    BASE
Place Tararua Butter and Chelsea Soft Brown Sugar in a medium-large saucepan on medium heat. Cook until butter has melted and sugar has dissolved. Remove from heat and stir in flours and coconut.

Press into prepared tin and bake for 15 minutes, until golden.

    FILLING
Place Tararua Butter, Chelsea Soft Brown Sugar and Chelsea Golden Syrup in a medium-large heavy-based saucepan. Cook over medium heat, stirring occasionally, until butter has melted and mixture comes to a simmer.

Add condensed milk and cooking, stirring, for 4-5 minutes, until large bubbles start appearing. Cook for a further minute.

Pour onto base and bake for 12-15 minutes, until caramel is golden. Allow to cool at room temperature for 30 minutes, then refrigerate for 30 minutes.

    TOPPING
Place chocolate and oil in a heatproof bowl and microwave on medium-low in 30 second bursts, stirring in between, until melted and smooth. Spread onto cooled filling.

Refrigerate for a further 45-60 minutes before slicing and serving.

NOTE: recipe updated June 2022 (thickness of caramel layer increased).

Easy to make, very yummy

The caramel method is completely wrong, you definitely don't need to bake the caramel. I followed this recipe and baked the caramel and it made it a bit chewy. Next time I'll won't be baking the caramel.

The original caramel recipe was a lot nicer

Good

Delicious!! Slightly adapted with almonds vs macadamia and added sea salt at the same step for that salted caramel flavour. It was a enjoyed by all! Definitely making it again (in fact I just made it again tonight but this time using hazelnuts).

Absolutely amazing!! I add biscoff spread and it turns out Absolutely devine!!

Really good but be sure to use baking paper!

Utterly superb. Exquisite flavours and the texture was simply divine. I fully endorse.

ya very bad
do not like

A.M.A.Z.I.N.G It was a hit with everyone. Making again next weekend as a gift with lunch

Great recipe, idiot proof. Very popular, a firm favourite near and far

I was difficult and the base would not cooks

Amazing used for my baking stall it was a hit :)

Good. like i.t it yum. good to make

Easy and delicious- and I resisted the temptation to double the caramel to make me feel it’s healthier!

Great

Great recipe! Brown sugar makes caramel so much richer.
Replaced coconut with weetbix as some can’t eat coconut.
Turned out perfect. Thanks for the great recipe

Amazing recipe! Best caramel slice I have made

Beautiful slice! I made 2 slices for the family gathering. My dad and nan loved it! I added some gravy mix to darken the caramel in one of the slices. DO NOT DO THIS!!

My favourite food is caramel slice so it is a 5 star from me.

I prefered the old recipe can you please post below

I have been searching for a recipe just like your caramel slice for ages and couldn't find one anywhere. thanks for this one. Do you have to use cocoanut?

best recipe ever always use it never fails always delish

this was amazing and very yummy but very sweet but yummy

Great!

this recipe is so yummy it is easy to make. but i had to double the base recipe because it needs a thicker base

Wasn’t sure if caramel was cooked and chocolate curdled but still tasted amazing

Yummy thank you Chelsea

delicious the best thing i have made

Use a small tin it works better. I made this slice today and the family loves it. It's very yummy and I used milk chocolate instead of dark. Super easy slice to make.

Love this recipe - I add half a teaspoon of rock salt to the caramel mixture and grind a light sprinkle on top pf the chocolate topping - extra delicious

It’s a piece of love

It’s real bad don’t use it at all!!!

amazing big hit family loved it!!!!!!

Fantastic!! Big hit in our house. Not sure how you could get this one wrong.. Just lovely!!

Delicious and easy recipe

Beautifully tasting slice. Gone in a flash. I recommend that you line the tray with baking paper as the foil tended to stick in places and was difficult to remove.

Really good.

Caramel slice is good for parties and lunches.

Used this recipe many times before and it’s never failed to impress me. The whole family LOVES IT! And begs me to make it whenever I want to bake.

Absolutely delicious! Unfortunately, my chocolate seized! I have made this recipe before, though, and that didn't end up happening, so hopefully, it was a one-off!

This is a good recipe, but I suggest leave the whole thing for a night to lose it’s condensed milk flavour.

Caramel is not thick enough, so double the caramel recipe unless you put it in a loaf tin. The caramel layer is very thin :(

Pretty good. Just one note
- be careful that you don't make your chocolate sieze at the end - melt the butter in a separate saucepan from the chocolate, and combine at end.

A delicious caramel slice. Very popular with my man! I felt it needed more Caramel filling so next time may make more of it. All in all a tasty slice, great with coffee.

Great recipe. I would recommend that you cool each layer before adding the next. This is so it does not melt into the below layer. Stunning. My clients and work colleagues LOVE it.

I love Chelsea Sugar!!! and all of its amazing recipes!!! keep being awsome!!! and keep making these amazing recipes.....

Great recipe but I double the base mix as I think it needs a thicker base. It turns out perfect with the same cooking time.

this is not enough info to make a caramel slice learn how to put instructions in order

delicious recipie i loved it

Beautiful recipe! The proportions were great! A real crowd pleaser in my whare!

Base ingredients were a bit sparse and I needed more to cover my tin. Base baked in half the time
Advised as did the filling. Tasted great though and nice and simple easy slice to throw together

Nice recipe. We remove the coconut and don't bake, but easy to follow and my wife loved it.

Found this recipe simple and easy to follow. Was enjoyed by our whole family ranging from 3-40yrs old. Will be using this recipe again for sure !

Followed recipe to the letter, but base too hard, caramel filling not very nice - don’t use this if you want a traditional caramel slice

Very easy to make and looks scrumptious. Made for school fundraiser bake sale and sold out quick. Great reviews.

Easy, with scrumptious results!

So delicious the chocolate slice brings back heaps of memories loved it. So did my grandchildren.

Lovely recipe, total crowd pleaser. I ended up making 1/2 again of the base as it was a bit sparse, perhaps my tin was a little large. Didn't adjust the caramel or chocolate though and it was perfect!

Absolutely delicious. Big hit in our house

Beautiful recipe!! We have a lot of sweet teeth in our house and we make this lots!! Never fails :)

Watch cooking times, especially when baking caramel. It caramelized in four minutes @ 180C, not 15-20 and the base baked in six. I doubled the filling recipe as it produces a very small amount.

Turned out real nice and sweet and not to crumbly. Very good recipe

Just AMAZING.

I am an amateur baker and found this recipe so easy to follow. At first I thought I may have overbaked the caramel but no the final product tasted divine. I got rave reviews from the rest of the family now that I have made another one. Especially love how the base almost tastes like Anzac biscuits :)

Delicious!!!

Not sure of the caramel measurements, and the base. I don't think the recipe is that clear- I'm not sure I would bake the caramel if I made it again and would instead smooth it on.

SO goooood!

Amazing recipe, always works well. Easy to follow and everyone loves.

Really bad and disgusting.

Very easy to make though I recommend doubling the biscuit base as the mixture wasnt enough to cover my tray (same measurements).
Still, it keeps well in an airtight container. Met with good reviews from the man in the house!

The cooking time for the filling wasn't right and was very small amount of it

So yummy and very easy recipe to follow

Need to double the caramel filling recipe, other than that an easy and quick recipe.

How much does this serve?
CHELSEA: Hi there, this makes about 20 small to medium-sized pieces.

.

easy to make great

So good, I double the caramel for extra gooeyness!

image description

It's yum !!!!!!!!!!!!

Excellent recipe! Love the coconut in it.

Love this, but I make a double batch of caramel and use Whittakers dark choc for the choc on top. Soo good.

Absolutely delicious, quick and easy too

image description

caramel slice's are sooooo yumm!!!

image description

This caramel slice is so good

Made this for the first time and the whole family loved it...perfect ratio between base, filling and chocolate layer! The second time I made I decided to add 1tsp of cocoa to the base just to experiment...also perfect!

image description

Proportions are not correct and filling inadequate. I personally would not make this recipe again!

Pretty good but next time I will add more butter or less flour to the base.

So good and easy to make

5 stars

image description

can manage to eat it but it is a bit stodgy and just doesnt taste like a caramel slice should

image description

Very Nice

image description

This did not turn out nice

AMAZING

image description

Yum! Great balance between base caramel and chocolate.

image description

Quite sweet, hard to eat. Didnt turn out as shown, use baking paper maybe instead of the foil? Bit too sweet and stodgy for our tastes.

image description

First time making caramel slice and this recipe was perfect... easy to do and very yummy
