Self Saucing Mixed Berry Pudding

Ingredients

    1½ cups Edmonds Self Raising Flour
    75g Tararua Butter
    ½ cup Chelsea White Sugar
    Grated rind of 1 medium sized orange
    1 cup Meadow Fresh Original Milk
    1 cup mixed berries, fresh or frozen (defrosted)
    Chelsea Icing Sugar

    Sauce
    Boiling water (enough to make up to 1¼ cups)
    Juice of 1 medium orange
    ½ cup berry or plum jam
    ⅓ cup Chelsea White Sugar

Method

    Preheat oven to 180°C. Lightly grease a 22cm x 9cm ovenproof dish.
    Sift Edmonds Self Raising Flour into a bowl. Rub in Tararua Butter until the mixture resembles fine crumbs.

    Stir in the Chelsea White Sugar and orange rind and make a well in the centre. Pour in the Meadow Fresh Original Milk and stir until combined.

    Add the berries and gently stir until evenly distributed. Spread batter into prepared dish.

    Sauce

    Make orange juice up to 1¼ cups with boiling water. Stir in the berry or plum jam and Chelsea White Sugar, pour over batter.
    Bake in preheated oven for 45 minutes or until the sponge top is cooked in the centre.

    Sprinkle with Chelsea Icing Sugar before serving.

Tips

    Mixed berries and berry jam could be substituted for raspberries and raspberry jam or blueberries and blueberry jam.

I'm annoyed I wasted berries, it just tasted like a stodgie pudding and took longer to cook in the middle than advised

Love this. Made for a pot luck went down a treat

Disappointing. It is easy & quick but lacks flavour. If I made this again I would add mixed spice & twice the amount of berries. It made a good size pudding for the family but lacked texture & depth.

So delicious! This will be a regular on our menu. Not too sweet and the sauce was perfect. Nice and thick. Being mixed berry every bite was a different flavour and every now and then a hint of orange would come through. Refreshing. I enjoyed every mouthful. Glad I stumbled upon this recipe. Thank you :)

Substitute 2 Tablespoons of the flour for good quality Cocoa powder. Tasty. Happy Family. I can't eat berries however, so have to make myself a small individual self saucing chocolate pudding....how terrible lol
I make my own Plum and Rhubarb Jam, so it's perfectly tart and not too sweet to use in this.

This recipe is great! Try it with lemon zest/juice instead of orange. I did it just with blueberries and it tasted amazing. My friend had just had oral surgery and wasn't eating much, but man she ate this!! I am not a fan of rubbing butter in but it was well worth it by the end! Enjoy making it!! ❤️❤️❤️

Lovely flavour. I used a heaped cup of defrosted frozen blueberries and fresh chopped strawberries as that's all I had. served with ice cream and runny cream. Great dessert for the people in our family who don't tolerate eggs

Great recipe! I tried it with mandarin and it was just as good. I put blueberries and raspberry in as the mixed berries and it was a nice colour and flavour! I recommend trying this.
