Ingredients

    3 tspns vegetable oil
    1 red onion finely sliced
    1 clove garlic, finely chopped
    1 long red chilli, deseeded, chopped*
    1 tablespoon yellow mustard seeds
    4 fresh mangos, peeled and coarsely chopped**
    1 cup apple cider vinegar
    1 1/4 cups Chelsea Caster Sugar

    * For extra hot chutney add 2 long chillies.
    ** If unavailable, use defrosted frozen mango cheeks.

Method

    1. Heat oil in a saucepan over medium heat. Add onion and cook for 10 minutes or until soft.
    2. Add garlic, chilli and mustard seeds and cook until fragrant (10-20secs).
    3. Add mangos, vinegar and sugar, bring to the boil. Reduce heat to low, simmer for 45-50 minutes or until very thick. Pour into hot sterilised jars. Set aside to cool. Refrigerate for up to 1 month.

    Makes 1.5 cups.
