Alice’s Lime Sour Cream Cake

    125g butter, softened
    1 Tbsp finely grated lime zest (heaped)
    1 cup Chelsea Caster Sugar
    3 eggs
    1 cup flour
    1 tsp baking powder
    ½ cup sour cream


    Preheat the oven to 160°C
    Grease and line a 20cm round tin with baking paper.
    Beat butter, zest, Chelsea Caster Sugar and eggs until light and fluffy.
    Sift flour and baking powder together and fold into egg mix alternately with sour cream.
    Pour mix into the tin and bake for 45 minutes.
