Ingredients

    125g milk chocolate
    60g butter
    3/4 cup Chelsea Icing Sugar
    100g almond meal
    4 Tbsp Baileys Irish Cream
    100g milk or dark chocolate, finely grated, to decorate
    1/2 cup cocoa powder, to decorate

Method

    Place chocolate and butter in a microwave safe bowl. Cook on medium in 30 second bursts until melted (approximately 2 minutes) 

    Stir in Chelsea Icing Sugar, almond meal and Baileys. Beat until smooth. Refrigerate for 30 minutes or until firm.

    Roll tablespoonfuls of the mixture into balls. Place on baking paper.

    Roll half of the truffles in grated chocolate and the other half in cocoa powder. Place in truffle cases and refrigerate until required.

    To make gift box, spray paint an egg carton and leave to dry. Silver or gold paint work well. Once dry, place truffles in their cases in the holes and tie carton closed with a pretty ribbon.
